Perplexity Shopping is the set of shopping features in Perplexity, where the assistant answers a buying question with product recommendations and, for some users, a way to buy. Perplexity finds candidates using its own crawler and search index.

What this means for your store
Because Perplexity relies on its own crawler (PerplexityBot) plus indexed pages read at query time, your path in is the open web: allow PerplexityBot in your robots.txt, stay indexed, and keep your product data in readable HTML. It is the same fundamentals as the other assistants, with its own crawler to let in.
